Primal Pizza!
Who doesn't love a good pizza? New York, Chicago - they're all good! It is a problem for those of us who love to eat pizza but do not love to eat bread. This pizza is soooo good! You won't even want "real" pizza even though there is nothing "real" in that other stuff. I found the recipe here. Ken & Kendra really liked it though they were doing the Paleo Challenge at the time so not sure how accurate their opinions were at that point. : ) However, my dad who does not eat anything close to paleo/primal loved this pizza! That's saying a lot for someone who has pizza every Monday.
Ingredients:
1 c cauliflower, cooked and riced
1 egg
1 c mozzarella cheese
1/2 tsp fennel
1 tsp oregano
2 tsp parsley
Pizza sauce (check for sugar)
Toppings (make sure meats are cooked)
1. Preheat oven to 450 degrees F. Spray a cookie sheet with non-stick spray or use a pizza stone.
2. In a medium bowl combine cauliflower, egg and mozzarella. Press evenly on the stone/pan. Sprinkle evenly with fennel, oregano and parsley. Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).
3. Remove the pan from the oven. To the crust, add sauce, then toppings.
4. Place under a broiler at high heat about another 5 minutes.
