Easy Like Sunday Morning...

I am very blessed to be married to a wonderful husband who loves to cook me breakfast!  I get to wake up to the smell of French press coffee and pancakes every Sunday!  This recipe and photos are courtesy of Chad!  Recipe from Adam Kayce.

Makes ~12 relatively thin pancakes

2 eggs 
1/2 c almond meal
1 c shredded coconut,
unsweetened
1 can coconut milk
1/2 tsp sea salt
1/2 tsp baking powder
1/2 tsp cinnamon (to taste)
Vanilla, optional (to taste)

Mix all ingredients and put in blender.  Cook medium heat until you see bubbles then flip until lightly browned.  Serve with eggs, fresh fruit and coffee for a fabulous breakfast!

Um....is there a step missing on this post? I just made these. We hate them. They're no bueno and they don't look anything like your pictures. :(

Carolyn, I'm sorry you hated them! = / All of the ingredients are there. I just posted the video so maybe that will help. We made them many times before they came out looking like the ones in the picture, so maybe you just need some practice! : )

I think we had bad almonds or something. We had to make our own almond meal in the magic bullet because we couldn't find it in the store. Also, Jason does not have measuring spoons so I had to guess for the baking powder which can make a huge difference. However, in order to make them more tasty we made fresh strawberry sauce with a little brown sugar (I'm sure honey would work just fine) a drop of water and fresh strawberries in the magic bullet. It was delicious!
