Salmon Chowder

With the cold weather lately, I have been in the mood for some hot chowder!  Most chowders though are not so good for you so try this one.  It's from The Primal Blueprint Cookbook.  I made this in a big pot but you could make it in the crockpot if you want to come home to something warm. : )

Serves 4

Ingredients:

3 slices bacon
1 small onion, finely chopped
1 tsp dried dill or 1 Tbsp fresh, chopped
1 bay leaf
Black pepper, to taste
1/8 tsp cayenne pepper
2 stalks celery, finely chopped
1 1/2 - 2 c finely chopped peeled trunips/cauliflower
1 1/2 c chicken broth
1 - 7.5 oz can red salmon, reserve juices
1 - 14 oz can coconut milk

1. Cook bacon in large saucpan over med-low heat until the bacon fat is released (Don't you love the smell of bacon??).  Add onion, dill, bay leaf, black pepper, and cayenne.  Cook until bacon is barely crispy.
2. Add turnips/cauliflower and chicken broth.  Simmer until veggies almost tender ~5-7 minutes.
3. Add salmon and the juices and simmer a few more minutes.
4. Stir in coconut milk. Bring to a slow boil then simmer over low heat for a few minutes. Remove bay leaf and enjoy!
