I really miss grilled ham and cheese sandwiches. There's not a lot I miss about eating bread but I miss these. So... I found this recipe for spinach bread from The Primal Blueprint Cookbook. It's a bit too moist for me so I'm going to keep looking for a good "bread" recipe but in the meantime, here's this one! After making the bread, slice it and make a grilled ham and cheese just like you used to. : )
Spinach Bread
Serves 6-8
Ingredients:
3-4 eggs, whisked - if you want this firmer which I would recommend, use more eggs
16 oz frozen spinach
2 Tbsp butter
1/2 c pine nuts
2 cloves garlic, crushed
Small bunch basil ~15 leaves
1/4 tsp salt
1. Preheat oven to 350 F.
2. Defrost spinach in small saucepan over low heat. Put in colander lined with cheese cloth or a thin towel and wrap the towel around the spinach to squeeze out as much moisture as possible. I think the importance of this step was underestimated when I made my bread.
3. Melt butter over low heat and add pine nuts and garlic, toasting until golden brown. Pine nuts burn easily so do not go far here.
4. Put in food processor with the basil and pulse until the nuts are broken up but not completely smooth. Add spinach and salt and pulse for 10 seconds. Stir in eggs.
5. Scrape into a buttered pie pan or 7x11 baking dish. Bake 20-30 minutes until set. Let cool then cut.
